"Chassé, pêché, domestiqué, familier ou sauvage, l'animal est indispensable à la survie de l'homme et se place naturellement au centre de l'économie des sociétés pré-industrielles. Vivant, l'animal est tout autant le pourvoyeur de ressources directes que, par sa force motrice, le complément indispensable aux activités agricoles, artisanales et commerciales. Mort, un large éventail d'activités, boucherie, tannerie, tabletterie, le transforme et lui confère alors une seconde vie. Par ailleurs, l'animal participe à l'affichage du statut social d'une personne, de son vivant comme dans sa mort, comme en témoignent la pratique de la chasse, la taille d'un cheptel ou encore les tombes de chevaux jouxtant des sépultures royales et aristocratiques. Mais la relation animal-homme ne se limite pas à une simple exploitation de l'un par l'autre et l'on ne saurait étudier les sociétés altomédiévales sans prendre en compte la part affective, symboliqueut Moyen Âge. voire religieuse, de l'animal : ornementation sur les bijoux et les accessoires vestimentaires, dépôts alimentaires ou banquets funéraires. Ce vaste champ imaginaire et spirituel recèle encore des pans à explorer. Ces dernières décennies, l'archéozoologie et les spécialités apparentées se sont révélées comme d'irremplaçables vecteurs de connaissance des modes alimentaires, des pratiques agro pastorales, des épizooties, mais aussi des contextes paléoenvironnementaux. De tels apports ne peuvent que modifier le regard du chercheur et l'amener à réfléchir sur les méthodes de fouille, de prélèvement, ainsi que sur les nouveaux champs d'étude à privilégier dans un avenir proche.
